This time of year, my kids are hungry… all the time. Seriously like from the second their toes hit the floor to the second their heads hit the pillow at night. The thing I can’t figure out is how they can eat SO much and stay so little. I wish I could say the same for myself.
Breakfast has become their favorite meal of the day. Coincidentally, they wake up right as I am knee-deep in work and want a hearty breakfast. Gone are the days are cereal and a little bit of fruit. These girls are athletes and they both need some protein and I need something fast to fix them. Thank goodness for convenience foods mixed with a little fresh fruit.
I don’t know when you last perused the freezer section at Wal-Mart, but now they are selling some great stuff. We love Eggo Cinna-Toast Cinnamon Roll and Choco-Toast Chocolatey Chip waffles. The best part is that they now have colors & flavors from natural sources! That makes this mama feel good about serving them up to her girls.
First, let’s just take a look at how cute the tiny pieces of cinnamon toast are… everything tastes so good when it is tiny, don’t you think?! You just pop them in the toaster and wait for them to toast. I like for mine to be good and warm.
To make the sandwich, I usually cook up some eggs in muffin tin at 350 degrees for about ten minutes. I normally use between 6-8 eggs, a dash of milk and salt and pepper to taste. I also love the fully cooked turkey sausage patties that just need to be reheated.
Place them all together and cut them along the lines of the toast. You now have a sweet and savory protein packed breakfast that is so delicious it doesn’t even require syrup! The mini breakfast sandwiches were a hit and they are perfectly delicious and filling… thank goodness!
