Hi everyone! It’s Samantha from Five Heart Home, and I’m so excited to be a recipe contributor this summer here at Uncommon Designs! When I’m not wrangling my two energetic boys and sweet baby girl, I’m blogging quick and easy, family friendly, real food recipes, plus the occasional fun, seasonal printable. Today I brought over a delicious dip that would be an amazing appetizer or scrumptious snack all summer long. I came up with this recipe recently when I needed to use up leftover ingredients from my favorite tortellini pasta salad, and I’m so glad I did! Whether you serve it at a picnic, a barbecue, or a Fourth of July celebration, this Fresh Summer Corn Dip will be a surefire hit! I love that this dip is just bursting with simple summer flavors, from crisp, sweet corn kernels, to plump, juicy tomatoes, to ribbons of bright, fresh basil…all tied together with crunchy, salty chips!

The preparation is pretty quick and straightforward as well. First you’ll need to roast some fresh ears of corn. Now before you decide that that sounds like too much work, I encourage you to check out my favorite method for effortlessly roasting fresh corn without having to deal with sticky, messy silk! After your corn is cooked, simply slice the kernels off the cobs and purée half of them with a bit of melted cream cheese to give the dip a luxurious, creamy texture. The remaining kernels are left whole for that characteristic crisp-tender crunch of fresh corn. Fold in some cherry tomato halves and a chiffonade of fresh basil, and you have a colorful, flavorful dip that will disappear in no time!

FRESH SUMMER CORN DIP
8 servings

Ingredients:

  • 4 ounces cream cheese, cut into small cubes
  • 1/4 cup milk
  • 1/2 teaspoon garlic salt
  • Freshly ground black pepper
  • 3 cups fresh corn kernels, roasted and sliced from the cob (from about 5-6 cobs), divided
  • 1 teaspoon fresh lime juice
  • 1 cup halved grape or cherry tomatoes
  • 1/4 cup fresh basil leaves, sliced into ribbons and coarsely chopped
  • Corn chips or tortilla chips

Instructions:

In a medium pot set over low heat, stir together cream cheese, milk, garlic salt, and pepper until melted and smooth. Remove from heat and blend in 1 1/2 cups of roasted fresh corn kernels. Allow mixture to cool for a few minutes before transferring to a blender or food processor and puréeing until mostly smooth. You may add an additional tablespoon or two of milk if necessary to get things blending, but don’t add too much! And it’s okay if the finished purée contains small chunks of corn.

Place remaining 1 1/2 cups of corn kernels in a large bowl. Stir in cream cheese purée and lime juice, and then fold in tomato halves and chopped basil leaves. Refrigerate for at least an hour before stirring and serving chilled with corn chips or tortilla chips.
